Cholov Yisroel:
If you go onto Kosher Panama Website you can search for Cholov Yisroel by entering Jalav Israel in the search, just be aware if the site lists Jalav Israel and Lacteo in the description, the establishment may have both CY and non-CY so be aware and double check with the staff.
SuperKosher also had a nice selection of CY breakfast/snack/frozen items available.

There is a local chalav yisroel that isn't up to everyone's standards. It isn't up to Chabad as they use a lower kasherimg temperature than the alter rebbe holds.
This is what local chabad down there told me. Don't hold me to any of it please.


Synagogue:

The Jewish community in Panama is mainly in Panama City in the Punta Paitilla area.
You must bring your passport with you to enter the shuls. You can bring your passport over during the week if you are not staying in the eruv. They will make a copy of your passport.

Sinagoga Beth El – Orthodox, Ashkenazi. After Shabbat morning services, they have a full sit down Kiddush lunch.
They also serve breakfast after weekday shacharit.

Are there safety issues?

My tour guide to Money island and indengious villages didn't cancel but she did say its not a good time to visit. My other tour is to pearl islands with Ilene

The ferry to Pearl Islands leaves from the causeway and there were not any issues getting there last week.

The only tour we had to cancel was anton valley and i believe the same applies to san blas

1-We did the Canal before the protests really erupted.

2-Casco Viejo is very close to the city (as is causeway) so I don't think it should be a problem. (The problem with Anton valley is that you have to drive down the Pan-American highway and the protesters blocked it and caused ppl to sit in their cars for 10+ hours)

3-I bumped In to 2 small protests but they were totally not violent

Based on some googling, seems the Teachers ended the strike. Hopefully that means protest winding down and not ratcheting up...
I'm set to go in a few weeks be'h and very much looking forward!

One of my guides told me there were some but that they were dwindling down

We did San Blas on a day trip with Sorhay.  She does not accompany you to San Blas but arranges everything.  I am not sure exactly what time we got back or if you would be back in time for mincha.  We did not find it to be "crowded."  One island we went to - bunch of people showed up shortly after we arrived - we asked the guides to just take us to another island.  There are plenty of islands to go to/visit and its very easy to avoid crowds.  Its all in my TR.

Perhaps I'm wrong, but my impression from others is that from Panama City going to Pearl Islands is much less commute time etc. We are really aiming for a relaxing trip and not looking to cram in too much (aside from some of the reportedly delicious food :) )

Pearl Islands just seemed to give us that day of relaxation/water activities while still making it back at a good time. Am I misunderstanding the San Blas experience?

Do  you want to ask her if she can hook you up with a different boat driver to take you around?
Or maybe you can call the mar y oro hotel which is on the main hotel on the island and ask them if they have someone who can give you the tour
