Cholov Yisroel:
If you go onto Kosher Panama Website you can search for Cholov Yisroel by entering Jalav Israel in the search, just be aware if the site lists Jalav Israel and Lacteo in the description, the establishment may have both CY and non-CY so be aware and double check with the staff.
SuperKosher also had a nice selection of CY breakfast/snack/frozen items available.

There is a local chalav yisroel that isn't up to everyone's standards. It isn't up to Chabad as they use a lower kasherimg temperature than the alter rebbe holds.
This is what local chabad down there told me. Don't hold me to any of it please.


Synagogue:

The Jewish community in Panama is mainly in Panama City in the Punta Paitilla area.
You must bring your passport with you to enter the shuls. You can bring your passport over during the week if you are not staying in the eruv. They will make a copy of your passport.

Sinagoga Beth El – Orthodox, Ashkenazi. After Shabbat morning services, they have a full sit down Kiddush lunch.
They also serve breakfast after weekday shacharit.

Just got back from Panama and wanted to share info to a driver/tour guide that we used that was AMAZING!
I can't recommend him enough, and I'm actually surprised that I haven't seen his name on the forums.
Name is Nestor Andrade. His number is 507.6949.5330 (can whatsapp him).
He is extremely familiar with the Jewish community. He knows all about Lakewood, Flatbush, kosher food, Jewish music, Hebrew words, everything - he is super funny! He seems to be driving Jewish clients almost every day, both visitors, as well as locals. 
His prices were great, and even cheaper than others that I quoted.

My review of Eshel Suites is long overdue.
Excellent accommodations!
Location: Around the block from Chabad. A few blocks from the Ashkenaz shul and one of the Sefardi shuls.
One block from the Kosher supermarket, which is across the parking lot form 3 restaurants.
Building: nondescript from the outside. Fresh and elegant and spacious inside.

2 flights up has other, 1 BR suites that have a kitchen area.
Also upstairs is a common area. Where on Shabbos there are tables to eat.
He helped us with Shabbos food suggestions, too. We were there a week and loved it.

Other people who were in other hotels (on high floors) came there just for Shabbos.

best to bring it along first time, unless your part of a pre-approved group they may insist on ID for first time entry even on shabbos.

Where are the different places I can eat on Friday night? besides chabad.
Beth El has a nice meal shabbos day (wasn't there fri night)

yes, you need to fill it out.
When you fill out the form, they respond in a day or 2 with an official number and bar code that’s required to enter.

-The Gatun Locks  are a bit different than the Miraflores Locks on the Pacific side.  Also a better view of them. (Agua Clara visitor's center) If you have the time, well worth the visit.

-There's a fort that's mildly interesting.  Has a history museum of the big battle of the area.

Any particular reason you're not considering the Residence Inn? Been discussed here quite a bit.
