Part of the difference is cultural. Unlike the US, in Israel there is a lot of animosity between Charedim and non/less religious. A restaurant that is very black and white will limit itself with other clientele.

As an example, Skyline in Jlem rarely has anybody not dressed in black and white, despite being competitive with rabbanut restaurants.

Also, in general Israelis are more in the know so things like Meuhderet that require more specific knowledge are less of a problem for the local clientele. Tourists aren't as big as a market as they think of themselves, the restaurants in Jlem and TA have been packed for the past few months.

I think rabanut mehadrin has to use a schita approved by them (kehillos/she'eris). Mehuderet gives more leeway.
Mehadrin has a higher and more specific standard for shechita as well as mashgiach temidi. Mehudret relies on יוצא ונכנס and the standard for shechita will be listed on the individual certificate.

Not bad at all. Different energy than לחם בשר. The fillet was super and they have really good garlic gnocchi. Skip the carpaccio.

Check Regina in Sarona I think they might use proper mehadrin meat. Probably Tel Aviv Mehadrin. I think rabanut tel aviv have a website so check there. Def no their machpud places, mb a shipudiya but nothing proper.
