I'm going to visit my seminary daughter in a week and a half, looking for ideas of stuff we can do together.

Is Chevron/ Mearas Hamachpeila considered safe currently?

Ideas for fun (not too easy) hikes we can do without a tour guide?

She wanted to go see the kibbutzim attacked on Oct 7, how does that work? Are they open to see, are residents ok with people coming?

Any off the beaten path ideas that I couldn't just do in the US?

Because I like mountain biking, any recommendations for a place we can rent mountain bikes and do a few hours of biking?

Chevron should be fine. (go with a bus, dont drive there yourself)

There are plenty of hikes, how much time to you plan on devoting to hiking?
Winter is the time to hike, but depending on the topography of where you plan to hike you have to be sure to be on top of flash flood warnings.
OTBP Hikes: Machtesh Ramon (Near Mitzpea Ramon), Machtesh Hagadol+Katan, colored sands etc (near yerucham/dimona), near Eilat there are a few - Timna, Red Canyon...
Less OTBP: Ein Gedi + others near the Yam Hamelach, Sovev Yerusholayim (can be done by bike too), JLM-Beit Shemesh, Burma Road (Biking)....
Not for the current security situation: Yam Lyam, Golan Trails...

I've heard this too, and it's pretty pashut to me... or do you not mind holding some random girls hand and walking around? (I know that you can try to say "not  derech chiba", but still...)

Holding a random girl's hand is fine. Random guy, on the other hand - I'd be pretty uncomfortable with that

I wasn't comfortable with the situation as per my question above. We ended up going to TLV 2048 which was a lot of fun, I'd recommend
