The restaurants in the hotel are under OU, dunno if thats where shabbos meals come from though.
Same with Jerusalem Gardens.

Sounds like the whole hotel is OU.
Kings and King Solomon (both 3-4 star) were Jerusalem Rabbinate Mehadrin last time I checked but you can ask.
Also, Inbal only serves mehadrin food Shabbat - but the hashgacha is not mehadrin so you may want to speak to the mashgiach first (just call the hotel and ask for him) before deciding if that suffices for you. That is also the case often in the Citadel and Waldorf -  but you need to discuss with the mashgiach to see if that is the case this week and if the way these places deal with the cooking of non-mehadrin food "in parallel" is sufficient for you.
