Not sure what they are doing.  They are ordering ingredients, etc, and making it there.
The thing is that they will be the first ones to serve sushi with Rubin hechsher.

Manny's is a huge Jewish book and Judaica store that carries a ton of books both in English and in Hebrew. They also carry siddurs and can have them engraved for you for approximately 8 NIS.
