We took Artzeinu tours for some up north tours. They were very good.

I'd do a Segway tour in Yerushalayim. Hang out in Yerushalayim.  Shuk, kotel etc. I'd go up north for 2 days as well. And a day at the beach as well in Tel Aviv.  Maybe Jeeping. And a day in Yam Hamelech.

Can someone please explain the process of eating in a restaurant on the 2nd day of yomtov?

Prepayment?
Preset menu or just order from regular one?
Do all restaurants (Yerushalayim near waldorf) offer this?

Are there any that offer the meals in a quiet (more YomTov) setting?

I'm sure it depends who you ask, it's pretty split.
On one side you have those with the slightest knowledge of Israel kashrus (or kashrus in general). They stay away.

On the other hand you have those who see hebrew letters, people with beards, and good food and consider that "Mehadrin". They stuff their face.

Another fair and polite assessment.  :)

I think you've nailed it on the head there.
