Dan- When are you going to Israel? I will be going with my 7 yr old this week, and am looking at the same places you are ( Chocolate making/Eretz Bereishit). Also, I will be based in Efrat, so it is closer to me, but am hopefully going to do bread making at Pat Bamelach. heard amazing things about it.
Next week iy"h.
Save your time, I don't answer PM. Post it in the forum and a dedicated DDF'er will get back to you as soon as possible.

I see the Ramparts Walk around the Old City has 2 sections - north and south, that don't seem to connect. Assuming it's likely to be hot, is it really worth it to do both sections, and if not, which of the 2 sections is the better one, which we'll make sure to do first?

Yes. I went a few years ago. It's not all that much of a tour. They have a room that seems like just a part of the workshop space that they put chairs in, and someone (I think the owner in our case) gives a little speech, talking about the concept of shofar, how they source the raw materials, how they process, etc. Then they move into another area where he gives a demonstation of several of the stages of processing the horns into a finished shofar (bits and pieces, not start to finish). Also, they say they offer English, but at least in our case, despite asking in advance, it was just in Hebrew (the adults in our group translated as best as possible for all the kids).

We stopped there on the way up to Tzfas. I wouldn't necessarily go out there just for this. It is a really nice area to drive through though, and there are other things to do on the Golan side of the Kinneret (separate beach by the Kinar, Majrase and other water hikes, etc.). If you do go out there, be sure to stop off for a fantastic view of the Kinneret on your way back dock the mountain/hill from the shofar factory. It's called Mitzpe Ofir. There's a sign with a turn-off which takes you on a very bumpy dirt road alongside some fields. In the screengrab below, I circled the location of the factory on the bottom left, the turn-off point in the middle, and the observation point in the top left.

This is a good starting point:
https://www.parks.org.il/en/map/

The Majrase is very chill - I went years ago with my wife when she was in month 6 or 7 with our first child. The other 2 I know any specifics about in that area are Nachal Yehudiya and Meshushim (which has the hexagon pool) - both of which are much more intense hikes, and actually drain into the Kinneret right around the area of The Majrese. Further north, there are a bunch parks/reserves with water hikes, including Banias, Tel Dan, and Nachal Snir.

The northern one goes around the Muslim quarter, and southern around the Jewish quarter. I went several times to the southern and it's amazing, but unfortunately, never to the northern portion.

Hi, going to Israel in July with pretty elderly parents but they are able to walk ok for a bit, not too long.

Any interesting activities we can do with then in center and south israel?  Maybe some kind of factory tour or interesting museum?

thanks.
