Just spoke to Cinnabom Mashgiach:

He says that Cinnabon is Rabbanut Mehadrin, Chalav Yisrael, and only uses Eida Charedis and Landau.
His number is 054-846-0500.

OMG, I just realized that I never got around to finishing up my Cinnabon report. Mah bad...  :-[

All of the above is true, except for the Mehadrin part (see below). In addition, the flour is sifted, challah is taken from the dough, and all of the workers are Jewish. I asked the mashgiach "everything sounds so good, and all the ingredients are mehadrin; so why does the te'udah onluly say Rabanut, and not Mehadrin?" He answered that Rabanut Mehadrin requires a mashgiach at all times; whereas he comes and goes. He is there during crucial processes such as the sifting of the flour; the rest of the time, he pops in at random.

As for the culinary follow up, I will post pictures momentarily.

I must of misunderstood him. It's sounds weird (at least compared to regular rabbanut practices) that in order to be Mehadrin he has to be around constantly, though it may be because they're a bakery using tons of dough that has to mafrish'd and sifted, I guess it makes sense.

Yeah, it sounded weird to me too. But there's no denying the fact that when I was there, the certificate did not have the word "Mehadrin" on it. Yet at least it's not the kind of Rabanut that's one step short of pig fat; it's good to know that it is the "high end" of Rabbanut, where everything checks out except for a couple of technicalities (similar to the LMDS).

They switched Hechsherim about 1.5 years ago. I agree that it was very shady before BBY.

I didn't eat there when it was shady so I can't tell you about then. But the menu definitely changed; things like foie gras aren't served anymore due to kashrut.

Right now though, the restaurant is my number one ranked restaurant in Israel. Tough to beat.

Wow, tough question. I was told not to eat Deck's a long time ago (kashrus wise). It was stupendously delicious 5 years ago. I'm gonna go with Gabriel though as it's more Gourmet style and has better decor.
