Was driving in Brooklyn with a cousin from the airport and she decided to take her baby out of the car seat without my knowledge. Only found out when the cop pulled me over.
I plead not guilty,
Am I responsible for her (the adult mother) taking him out, or is she responsible?

You're not allowed to drive if the baby is out of the car seat.

i know. The baby was in the car seat when I left. I had no idea she took him out. (Also the cop stopped me at a red light. He could not have seen me driving with the baby out of the seat even if she had taken him out before I got to the red light)

Maybe he saw you earlier but waited for the light.

i don't think so because he pulled up in the service lane and I was in the main road. He motioned to roll down my window to tell me to put the baby in his seat. I told him thank you and he's like "actually pull over in front of me and I'll block traffic for you" he seemed hesitant about giving it. But I guess it's my word against his so he'll probably win.
But you are basically saying I can't try and say that I had no idea that the mother took him out of his seat and she's a responsible adult and should be the one responsible. (It happens to be true. I did not know)

I took pictures and it looks like my car is around 6ft away.

Anyone have experience getting off this? Is it worth it to plead not guilty?

I remember reading, I think here on the DDF about how someone who pleaded not guilty with pictures got response that pictures are no evidence as it could be they were taken after car was moved.

I know you probably didn't do this but I was once in Washington DC and someone pulled out pictures showing that it wasn't in that place. The judge than printed pictures that the cop took at the time of giving the ticket which showed the car parked illegally.
