I have spent an considerable amount of time (4 minutes and counting) on Amazon and Google trying to find a good kosher sushi recipe book but alas I have returned empty handed.Any suggestions?
There aren't really any recipes. You need to know how to make the rice, the rolling technique, and you just fill with whatever you like.

I doubt that there is one yet. Why don't you get a non-kosher book, and substitute?
If you already know how to make basic sushi, why don't you just pick up a menu from one of the local kosher joints and duplicate their rolls?
The tempura is what gets to me as I need to sneak in and see how they do it I guess. I guess if all else fails a trip to Japan is planned and I shall master all the skills.
