Need a fictitious itinerary

I'm trying to help someone get proof she's leaving the country as she has a job contract and the boss wouldn't let her go without proof she's leaving the country.

Anyone have any ideas?

Bit of a hassle. No easier way for a travel agent to do that?

Why can't you just book a ticket print out the confirmation then cancel within 24 hrs? I have done that before for visa purposes.
