Looking for ideas:
going away with wife and 6 month old for 3 night/2 days.
if possible, looking for 3 out of 4 of the following:
1. nice weather, 2. good kosher food, 3. Beautiful nature (mountains, beach whatever) 4 within 2-3 hour flight from Dallas

yup we'll probably end up in Miami again but I was looking for other options.
Is it worth going to Denver or do I need to go to Aspen, Vail area etc. to get the real beauty?

You would probably want to venture out of the city proper a bit, maybe 1-2 hour drive.

I don't think I would mind. Other people might. Look in the Greece thread - I think people reported going and said it was fine as long as you bring some cash

That's a whole topic in and of itself

I spent 5 nights in Rhodes and would've stayed longer. However, you can definitely "do" the island in 2 days. People have reported Santorini being good for a short stay

Check out the Greece thread. Santorini is really nice and so is Crete. Don't know the hotel options.
