Next Vacation - Ideas

Looking to go away in the summer
Traveling with 3 kids ages 1-7,
up to 6hr from nyc, somewhere not too hot and humid, with attractions to keep the kids busy

Using my Hyatt DSU would be a plus.
Meanwhile I have the PH aviara booked but looking for some better ideas

Im looking for somewhere to visit in October for a week. Preferably would like it to be in Asia 1-2, Middle East or  Indian Subcontinent on the AA award chart which are
Japan, Korea, Brunei, Cambodia, China, Hong Kong, Indonesia, Malaysia, Myanmar, Philippines, Singapore, Taiwan, Thailand, Vietnam, Bahrain, Egypt,Iran,Iraq, Israel, Jordan, Kuwait, Lebanon, Oman, Qatar, Saudi Arabia, United Arab Emirates, Bangladesh, India, Kazakhstan, Maldives, Nepal, Pakistan, Sri Lanka, Turkmenistan, Uzbekistan.

After removing undesirables for numerous reasons im left with
Japan, Korea, Cambodia, China, Hong Kong, Indonesia, Malaysia, Philippines, Singapore, Taiwan, Vietnam, India, Maldives, Nepal.

Further eliminating destinations without ample activities in the vicinity to keep me busy for a week plus non toddler friendly locations and its whittled down to
 Japan, Cambodia, China, Hong Kong, Indonesia, Malaysia, Singapore, Taiwan, Vietnam, India.

So out of those which one should it be?

I hear, those were actually on the bottom of my list due to needing a visa for China and lack of a weeks worth for HKG. If I would go I would prob do both in one trip.

Kosher food A+ but not a must.
Not packed with people

how about being in china for less then 72 hours and using their transit without a visa
