Leave TLV after Tbav to LCA and stay there for a week. (there we just chill out) fly from LCA to Athens or anywhere in Greece and tour a little for a week whilst going to a few different city's either by train or fly. From there fly back to LCA for 2 days and back to TLV.
I was thinking of getting a private pool during the first spell in Cyprus for DW as that would be epic for her.
Basically that is the style vacation we are looking for and it is quite cheap so any other suggestions would be appreciated.

I personally would trade Greek islands for Cyprus, not even the same league. I would go bonkers with a week in Cyprus.

I know. You've always had this thing against Cyprus. That's why I reiterated that it's just to relax. I'm going took into Greek Islands

You can relax in the myriad of beautiful places in Israel. No need to fly to Cyprus for that.

Looking to go away this week for 2-3 days with kids
Hyatt hotel
within 4-5 hr drive of NYC
somewhere with nicer weather than we currently have in NYC (90°+)

Any ideas?

the weather is gonna be basically the same wherever you go within 4-5 hours of driving from NYC

We had a perfect one week vacation in Lincoln NH a few summers ago. It was great for the whole family, minaar ad zokain, taf vnoshim... We rented a house (VRBO?) in a development with a pool etc. The activities there are the perfect blend of challenging and relaxing.
Now the question is where can we have a similar experience, without going back to the same area.

Ive been to both: Israel when single and Hawaii for my honeymoon both pre-ddf (post ddf I forsure would have went to MLE)

This time I would be going with 2 kids and one lap infant

What are your thoughts?

Did Israel will kids and going to do Hawaii with kids (all thanks to DDF!) so I can let you know for sure in September, but I think Israel is more kid friendly, plus ease of kosher food means less schlepping.

eouldnt be for an amusement park my kids love swimming and the beach

Your still limited especially with an infant. With what you'd he able to do you may as well do it in Israel.
