Looking for somewhere tropical to go for 2 nights with kosher food and minimal Covid restrictions.

Any ideas for 7-10 relaxing days during July at a location

1.  near water (lake, river, ocean, but somewhere that has private areas to avoid mixed swimming)
2.  near trees a plus
3.  near a minyan a plus
4.  exotic, unusual, activities are all pluses

key west is great for a short chill (mam's is delicious and even serves parve late breakfast) and there are some good sales on direct flights.

when we went we chose Casa Marina (waldorf) specifically because we wanted one type of room with a deck facing the ocean with some privacy and lounge chairs so we'd get free breakfast and on shabbos afternoon we could have our books and read in the sun without eruv issues (it was an awesome room). note Casa is about an hour walk to chabad though...

Note that now there are several kimptons there (and lots of hotel turnover) and u can probably use IHG free night awards at some of the kimptons as another option.

Prefer near area with options to drive to more secluded water for swimming.
Also, should have some other budget activities nearby as well.
