Get an AirBNB near the ghetto. There's lots of choices of great food.
The activities can be done with taped walking tours instead of the Jewish guide services.
A great experience for everyone.

for cheaper, go upstate and find a last minute open bungalow (check ads in upstate papers/circulars) or a vrbo/airbnb etc.
for more expensive, we loved the perfect Vancouver weather in august and they still have some good kosher food though maple grill is gone

Is there a city/region within up to ~6 hours of NYC where one can rent an Airbnb/VRBO with a private pool for ~$100-$200 a night? (ala PHX, MCO, etc.)

There are some around that in the Poconos. The various fees will certainly bring it much higher.

-1. IME, most in the Poconos just have community pool. Even those that have a private pool, it's mostly very small above-ground pools. Those that actually have real, private, full size pools are way more than $200/night before fees.

Looking for a vacation ideas in August. Traveling with wife and 10 month old. We have 5-6 days (including travel). Good weather , kosher food and luxury stays are all a plus. TIA
