How comfortable are you with chaos and poverty (that's Bangkok)...they are both cool but very different places.  Thailand probably needs more than 5-6 days also so what about Hong Kong and Singapore? I think those are great intro cities to Asia and you have good kosher food and Shabbos options.  For his first Asia trip I went last year with my DH to Singapore on the way to the Maldives.  Next year our whole family is going to HKG, Koh Samui and Singapore...hopefully we'll get some great scenery and cultural experiences without some of the negative experiences that are in other destinations.
I'm probably leaving from SIN on Sunday night so I'd have to do SIN for shabbos then. Getting into HKG Monday night so I guess I could do Mon night-Thu evening in HKG and then Thu night- Sun night in SIN. Is that giving each place enough time?

HKG 2 days is more than enough. Same for SIN

That sounds great and like Mochjas said if 3 days in HKG is a little too long take Tuesday or Wednesday for a day trip to Macau or the mainland.

Others may disagree but I just don't think 5-6 days is enough for Thailand and I'd personally want a slightly calmer Intro to Asia.  :P

suggestions for warm place to go in January with a baby for 1.5 weeks outside of usa? as of now, hawaii is top choice based on past recommendations.

not want to spend lots of $ on trip including excursions, so am using points for plane & hotel. not need kosher food since bringing my own, jewish community etc.... but flight time is a consideration. hence not going to thailand, maldives or new zealand no matter how much i want to.

I'm thinking of flying straight into SIN on Mon morning, spending two days there, flying to HKG on Wed, spending a day in Macau, then Thu-Sun in HKG and then back to SIN on Sun to catch SQ back home.

I wanted to do SQ and LH but you may be right, that probably makes the most sense.

Panama is amazing and the excursions won't kill your budget like Hawaii.  You could lug food if you want but they have better markets and restaurants than the US.
