I wouldn't go there for 7-10 days, of course you'll find stuff to do no matter how long you stay there,
IMO max 7 days 5 days is perfect.
Can always drive to Seattle (2.4 hrs)

I would be traveling with a 3yr old & 10-month old so driving too much wouldn't work

Definitely enough to do there. I wasn't there over Shabbos, but they have minyan, yeshiva...
I would need eating arrangements for shabbos that works with a baby

I need suggestions and advice.

Looking to spend 7-10 days alone just husband and wife (no kids) on a trip that will be once in a lifetime opportunity to escape the kids for a full week or longer.

Trip will take place in July 2020.
Flying from: JFK (or similar)
Airline: Any but have Jetblue Mosaic

Requirements:
Only thing my wife wants is sun and water. Just a relaxing day in the heat with a NICE pool and drinks is enough to make her happy.

In the past we always limited ourselves to places that had kosher food (ie: Miami, Vegas, Cancun, San Juan, Bahamas etc) but she wants something more "exotic" but at the same time the trip is longer than the average vacation we take (2-3 days) so food may be a significant factor.

What is the nicest Island that would work for her needs? Was thinking of Hawaii or Maldives, but not sure of the food situation and again having "decent" food options is an important factor on a 10 day trip (as oppose to a 2-3 day trip where we can live on fruits and yogurts).

Any suggestions? Any ideas? Any tips?

you are contradicting yourself. First you say all you want is sun and drinks. Now you want kosher food too? The answer is BOB and BRing your own food. July isn’t the best time for the Maldives but that can be an option as well

I agree, for this once in a lifetime, enough time for long flights, no kids trip, do BOB or MLE.  I love the privacy and special feel of the Maldives. We flew the Asian route and added two nights in Singapore and that also solved all our food issues as we ordered all our meals from the kosher restaurant there.  The Conrad happily heated them all up for us and bent over backwards to provide free kosher breakfast (you can read details in my TR). They also had kosher meals from Australia we could have ordered.  Go big with this one and make your wife super happy!!  :)

Not sure about BOB but no problem in MLe. Just don’t try to bring any wine or alcohol.

Find the article humorous and mostly true,
When traveling with kids we just call it a trip.
And taking some alone time for parents to rejuvenate and take vacation doesn't mean absolving one self of parental responsibility.

Heard nothing special there and nothing more then Tel Aviv, eilat or Netanya. Wanted Greece but in May can't find direct flights to any islands.

Jordanian border patrol is known to confiscate foodstuffs at the border. It's possible that they do it in Egypt too, just haven't heard of that experience personally.

I wouldn’t recommend Petra for a overnight stay.
