Is it just me or does anyone else think good restaurants make a mistake over expanding. Its very had long term to be full to capacity and having a smaller space with a demand will help with the long term viability of a place. (Although I really do not know anything about the restaurant industry except the I see places come and go faster then the tzedakah collectors in a minyan factory)
i was thinking the same thing

Restaurants also have the highest (or 1 of) failure rates in the world...

In this case, for such a good restaurant they really have limited seating. They probably wanted to start small. They seem to be packed every night and I think that it's sometimes hard to get a table at the exact time that you want. Place is quite small now.

Why do you need everyone to eat exactly when they want? Should I add 10 chairs to my office because every teacher wants to come right after school?

Can we talk about service in Kosher restaurants? Why is it so abysmal?

I’ve been to many non kosher restaurants that were way cheaper than our top restaurants and the service is not comparable. You got to see it to believe it.

Having it hard to get a table will ensure they are in demand for a much longer time.
