That would be my assumption as well.

Follow up question - NKS standards are mehadrin min hamehadrin & the only issue is some of their mashgichim are not great? Or their standards are not good but their rabbis can be trusted & he’s telling us these restaurants are keeping better standards than NKS is requiring? Or maybe their standards & rabbis are great & it’s all just politics then all their restaurants would be good.

The question wasn’t for you unless you also know what Dan knows but I don’t think the answer would be as simple as I know the Mashgiah, there’s definitely some follow up to that.
Who do you ask your Kashrus questions to and how do you typically research a Hashgacha?
I think he asked fair questions. It's a lot easier to research a known reliable hechsher than a less reliable one that has exceptions

There's a massive variance of prices within those categories.

Apps can be $15 or $50.
Figure $20 for cocktails or desserts.
Steaks can be $90 or $300.

on averages your choice of 2 steaks etc will be like 310 before tax/tip. Was at tabernacle last week for lunch, unfortunately their prix fixe is no longer the amazing value it was so we had to order straight, and it came out to about $370 for 3 pretax/tip with one regular ribeye (like 82, wagyu is more), a gnocchi and a chicken breast with potatoes with bacon (I had that bc I wanted to be healthy, and it was filling and delicious but also like $49). We also got 2 sparkling waters, a coke and 3 soups and 2 tuna and 1 steak tartar and coffee (no desserts otherwise).
Was a great meal, personally I would suggest not getting steak and trying other stuff or sharing 1 steak to keep it reasonable.

Was just in barnea, most apps are between 35 and 42 not counting the potatoes and French fries, drinks are low 20s, steaks are between 85 to 100, desserts are low 20s

Went last night to Barnea:

2 cocktails (one nonalcoholic)
2 apps (lamb riblits and patatas bravas)
2 mains (16oz filet de boeuf and short rib gnocchi)

Total = $317 with tax and 20% tip. Was amazing as usual.

Happens to be I usually subscribe to that train of thought. But one time I was in Teaneck by this little smokehouse and they had a smoked ribeye that was delicious. They smoke the entire rack till about 125 to130 and then sliced individual steaks and sear them at high temp.

Of course. But you can take what @Ephcc90 did, as a rough estimate. Which makes it seem that Tabernacle is more expensive assuming (yes, I know Tabernacle has 300 steaks, but assuming you are getting the lower priced ones)

Prices are comparable, though Tab also has higher end steaks.

Tabernacle last night:

Two Drinks
Two Apps (The apps were from the cheapest apps, many other apps were around $50. Korean Fried Chicken was phenomenal!)
Two Mains (Most steaks were more than $100 but there were one or two others under $100 and many other mains under $100.)
One Side (Sides were all $16. I would choose a different side rather than the sweet potato.)
Two Desserts (Most deserts were $18, I believe there was one for $14 and one for $28. Fondue is not currently on the menu {it's listed online} but may come back for winter menu per our server.)
