I've found Muscat to be great. Artichoke barigul salad, butternut squash soup, avocado egg rolls, among other things are darn good.

I actually heard/read (can't remember which) a vort from R' Nissan Kaplan that was matzdik the practice, at least in the case of camps that do it. If I have time later I'll link to it or paraphrase.

some overnight camps would learn, have a siyum, and once in a while have salami sandwiches or chicken wings for dinner.
It was not an elaborate restaurant party with 1.5" steaks, wine, lavish $200 meals and delicacies for all in the public who attend at the posted time.
