Can I rely on them for Shmittah laws?
rabbanut uses heter mechira unless the teuda says otherwise
if you don't rely on that, then don't eat their produce

Is the drive from Yerushalayim to Masada/dead sea safe for first time driving in Israel?

Yes, just take the 1 down to the dead sea, and then it's straight down the 90

Any suggestions where to stay by the dead sea for two nights for a 70-year-old couple begining  of July

needs to have minyan kosher food

I recently stayed at Isrotel Ganim.
It had a shul, but i was doubtful that there would be a minyan there, and i did show up and there were 2 other people there.
There were frum people walking around the hotels and beach - i dont know what they were doing for minyan either.
There is suppose to be a chabad in the hotel region as well- https://www.deadsea-chabad.com/
i could not find the location (I looked)  nor could I reach them via phone, but it was in May and maybe things have changed - maybe try them
https://www.deadsea-chabad.com/templates/articlecco_cdo/aid/3552999/jewish/minyan.htm

In terms of kosher food- there was a masgiach onsite- you should call them (or probably any of them at the hotels) and speak to them directly to see about your needs. Further, there is Gregory cafe inside the mall which is by the hotels. I think this was the only Mehadrin option.

What is the nicest Dead Sea hotel? Preferably near the Mall so we have some Mehadrin food options.
Thanks

Does anyone have experiences at the Yam HaMelach spas? I'm planning on taking a day trip there and I'd like to spend the day at a nice spa with some time at the water. Any ideas?

I've heard that some hotels offer a day pass to their beaches which also allow use of the showers etc.

Some hotels offer day passes to their facilities.
Check https://www.groo.co.il/ to see if any discounts exist.
