Didn't see this mentioned here, so FYI to all:

Renovations at the Crowne Plaza Dead Sea have finished and the private beach is open again.  Also, they now have renovated Club Rooms and a Club Lounge.  Don't know what the payup is to add it to a points booking, but this probably makes the hotel a much more lucrative redemption now (keep in mind, very limited choices for dining in the area).
in which area would I find mehadrin/glatt dining?

They have a mashgiach on premises who is very helpful in answering what item have which Hechsher. You can ask the hotle to connect you to the Masgiach. We were in the hotel last year and service is not the best.

does every hotel serve three meals or do some only do breakfast? whre would I check that on site like trivago? also, would you recommend staying in dead sea over Shabbos, or go to Jerusalem and back?

I personaly would prefer Jerusalem for shabbos. I think every hotel offers 3 meals you just have to pay extra, breakfast can be included depending what your status is and what you paid for the room. I booked on points and breakfast was not included in the crowne Plaza

crowne plaza is overall my favorite at the dead sea. they have private beach at hotel not across the street like many hotels, minyan if you are lucky, its large recently renovated and get the most of your$

Probably talking about the business lounge where they have some fruit, drinks and canapes.
I would speak to the mashgiach to figure out what you are comfortable eating there. Even fruit and vegetables can have big issues in Israel.

I often find more things I can eat in a hotel in China or Poland than in an Israeli hotel  :)

That might be the only hotel. If you want to go to the beach they have separate swimming all day.

The public segregated beach does not have spa facilities, at least I have never noticed it.
