Could be wrong but I dont think theyre going back to see things they didnt see...theres not that much to be seen in Venice for 4-5 times...
Could be they just love the city which makes alot of sense because it is a very nice city.

But if someones has two days...he could see/get alot done in two days in Venice.

I think that's what the OP wanted to know. It's not like it's a waste of time to go for two days because you couldn't do half of Venice ::)
I went my first (and only so far) time with school and we did everything in less than 24 hours.
I agree that it's never enough.

-ate breakfast with the locals
-Jewish museum
-a quick pass by Gam Gam
-the Rialto bridge
-San Marco (and went up the tower)

Nice list but that is definitely not

My guess:

its very nice...ate there last month. a lot quieter and is the place where Venice residents eat so you'll be able to meet some locals (both shabbos and during the week).
