With all the hot deals popping up now, I would wanna know the Halocha on the Nest Learning Thermostat
I installed my thermostat (bought from lowes for $134 after tax), there is an option to disable wakeup on approach, this means that nothing physical will happen when you go near the device, it could be that it learns your activity, but since it's not set to turn on and off based on activity there shouldn't be a problem in regards to Shabbos, there is an option of 7 day timer that sets the temperature (not on/off)

No. Neither IFTTT nor Stringify are able to do this. You need a real hub that supports the full API implementation to automate this.

More accurately this is not supported via the built in support for Nest or Ecobee. It may be possible to use the smart thermostat's REST API and the IFTTT Makers Channel to automate the http call.  I'm not sure what settings are available via the REST API.

Any progress on automating the on/off of the various sensors on the nest 3rd gen automatically before shabbos/yt and back on afterward?

I am in thier eco systom with cameras and want to have three of these one on each of our floors to have diffenret zones.

Is there older models that are better for Shabbos?

I am looking for a thermostat with sensors with which I can set different room priorities but don't necessarily need wifi is Nest the best option?

I would not recommend the nest for one simple reason. It has 2 degree temperature differential. This can not be changed.
Only on DDF does 24/6 mean 24/5/half/half

I hated the nest because there is no hold button. If you have a schedule set and then for say a 2 day yom tov want to hold a specific temp you cant do it. You need to change the schedule and then changs it back after.

Say I set heating at 72. It will kick on at 71 and turn off at 73. With the new furnaces they run for a few minutes after the call for heat ends. This means my house gets to 74. To big of a swing for me.

Wish I knew that before I bought them.
The E was free and the learning was around 40 (after rebates) so I just kept them.

I would say less of a problem. Not being adjustable makes no sense. Manual thermostats you can even adjust.
