When doing this in the past, I've found that if the milk is lukewarm when you add the vinegar, the result will be similar to fresh mozzarella. If the milk is close to boiling, it'll be much closer to farmer/cottage cheese.
Bingo. Temp is key to making the type of cheese.
Every cheese has its own temp. I've never seen boiling though. I think 175°F is the highest I've seen for riccota

Out of curiosity.... do you think there's a market for CY specialty cheeses? If yes, would a chassidishe hashgacha sell better ? Or is the heimishe market not interested in expensive specialty cheeses...

I just watch some cheese farms make cheese and ask a boatload of questions. My daughter has actually worked at one of the farms one production... Hopefully another one next week.
As far as recipes go whole milk (preferably non- homogenized) , rennet, cultures and sometimes salt. Proportions are key. I'll get some numbers for you. There are primary and secondary cultures that many cheeses require.

I don't know if people are looking for it right now... but with high quality marketing, branding, vertical marketing, social media  influencer affiliation etc you can prob convince people that they need this. Just not sure of it would be worth your while... might be cheaper and more effective to act as a supplier to already well know higher end frum brands and let them sell + distribute.

There's definitely a market. Probably not enough though. Also, the 6 hours is a factor. Pomegranate has a lot of specialty cheeses, but that's not on a large scale and their prices are not for the plebes.

double check with the OK that repacking is certified. I don't believe it is.

the microbial rennet shouldn't be dairy.  I don't think you can get retail CY cultures

Maybe too early in the am for me, but WHERE is it?  If I can't find the kosher certification info in just a few minutes (and I am embarrassed to say I spent much more than that) then they are doing something wrong with their advertising/marketing.  The closest I got was a one liner to look at their kosher FAQ page.  Searching for the word "kosher" doesn't even bring it up.  They're missing out on customers....

Yeah agreed, I needed to email them asking for the certification. This pdf has an expiry date in the past, however the OK website still has the actual item listed.
