I have been an AU for 3 months on 1 card that's like 2 years old and another that's new
with 2 pulls on my credit history
is it good enough to apply for a cc?
what is easier to get accepted to AMEX or Chase?

Your best bet is amex credit card (not a charge card).

Amex is much nicer to people with clean credit histories. People may argue but this but with the dozens of people I helped open cards for this is what I have found to work best.
