You can pass them down to your kids etc... They are costly, but they work great and you have them forever as long as the company exists and the knife is here physically that is...

it's funny you should say that, my parents have their bread knife for sourdough, and it was amazing... Then someone got them as a gift a diff company (also expensive), and they say it works even better. It's called something like Hendley and Benson... Forgot the exact name..

a $30 victorinox fillet knife works great.  keep it sharp.
A semi flex boning knife also can work
