5-6. Just under Borenstein.

If you think it's not quite as good as Borenstein, then maybe it would be a 4-5 on the scale?   Here's the current version of the scale, according to the wiki (my bolding added):

Stogel-Hermolis Scale:
1. Inedible, wouldn't feed to a dog. (Stogel)
2. Disgusting, would only eat if starving
3. Barely edible, would only eat if very hungry
4. Below average, but would eat if hungry
5. Average/typical KSML, would eat if hungry (Borenstein?)

If you take a Stogel and Hermolis, and you think Borenstein fits smack in middle you have no tastebuds IMHO.
Also I don't think we should be labeling all 1-10, just 1, 5, and 10 or something like that to get the idea.
Since meals change a lot you can have a caterer that's categorized as a 7 serve something that's a 3, and the labels will throw everyone off.

Yep, had a meal on United J out of Melbourne. Food was outstanding!

Great salmon, veal, pastrami, apple pancake crepe, good desserts etc.

There are pros and cons of having a numerical rating scale. 
Of course there is variation even within a particular caterer's offerings.
I would argue that having the scale and "forcing" its users to make quantitative estimates will help us to communicate.

I find them very good. Not Hermolis level but usually very tasty and often with a fresh simple salad.
To be clear - talking about J class here (for Hamasbia ex YYZ). And  I would call it an 8. But at the end of the day this is subjective and always changing.

Bornstein is NEVER fresh. Always previously frozen. TK serves fresh (as in fresh crunchy vegetables) KSML. Some of their meals are better than others, but I would take them over Borenstein in a heartbeat (I mostly don't like sweet dishes).
I've been waiting over 5 years with bated breath for someone to say that!

I don't mean to sound like @chevron, but "long-life" is what you might get if all you were served on your trips is Stogel shelf-stable meals, rather than what you get on your trips to NYC. And you wouldn't need an elliptical, as you wouldn't be over-eating. Remember, it's not so much what you eat, but how much and how you eat.
I've been waiting over 5 years with bated breath for someone to say that!
