The difference between a 9 and 9.25 is just semantics. Both are world class.

Mike's short ribs are just phenomenal and their mixed drinks are much better than LMs.

Shiloh's is very hit or miss.  I've been there when it would qualify as a 9 and when it would be a 5.  Service can be awesome or downright awful as can the food.

I have yet to do go Noi Due, but it's on my hit list.

It gets rated according to the rating guidelines in the OP.

3. Ambiance

Thus a fast food joint would not make it to a 10.

I agree with the rating guidelines, but those 3 factors can't be taken into account in certain categories.  If I'm going for fast food, I'm not looking for service or ambience as much as I do in a regular sit down restaurant. Thus, the food would account for maybe 80% of the score IMO.

I hear what you're getting at, but a fast-food restaurant would never be considered "world-class" and according to my guidelines would never get higher than an 8.  So an 8 for fast-food would be considered "perfect."
