I actually managed that one, the Jordan part is where I'm stuck on. Something about a war with Israel a while back......

I even suggested as an alternative going to the Maldives on another trip but since its a stopover in Dubai she wont agree.

I doubt this will help you convince your wife but ill tell you my experience:
I just had a stop in amman and I toured the city. I didn't feel threatened or unsafe at all. For sure there's nothing to worry about inside the airport.
I was also in dubai. (With an israeli visa in my passport)
First of all, about 80% of ppl in dubai aren't Arabs. They are Pakistani, Indian, from Africa...
And there's no walking around in Dubai because of the heat. You're always in "safe" places like malls, hotels...
And I saw a Chabad guy and his wife in the Dubai Mall.
If you have a beard and peyes then they'll know your jewish.
But if not you look like a regular American tourist. They never see Jews so even if you have all the telltale signs like a baseball cap cotton pants sneakers etc, your just a regular American tourist.
