It could work. Maybe something as follows:
8am- Burj Khalifa
10am- Gold Souk
11am- Drive to Abu Dhabi
1PM- Ferrari World
When you're done at Ferrari World head to the Mosque. It's open til 10pm I believe.
For an optimal Mosque experience, I'd go when you get to Abu Dhabi to see it during daytime hours, and then again before you leave to see it at night.

Check out Google photos and see if you'd rather see it by night, day, or both. It gives a very different impression.

was in dubai 2 weeks ago, contacted the guy in charge of the shul he said as of now only open on shabboss.
https://www.elliskosherkitchen.com/ advertises that they have kosher food in dubai. no idea as to the kashrus situation there
