Looks like an easy enough 9 minute walk from the Sheraton Hotel to the Star Ferry.  Is it easy to find a taxi at the Central Star Ferry Pier?
How much does the Ferry cost to the Central Star Ferry Pier, and how long does it take?

Thanks!
depends when usually pretty easy

i go during show time could be harder to get one.

I don't recall prices
if you want also you can book uber
problem with uber is when they can't find you they call....

your best bet is star ferry then taxi from there. prob half the price and half the time. the ferry is about 1o min. make sure you take the first class  ;).

I took a train back from JCC. having no knowledge at all of how it works i somehow made it back to kowloon. go figure! just make sure you keep your ticket to leave the train station.

If we're 5 ppl is it about the same price to take the ferry or ferry and taxi on HKI or to just take a taxi the whole way? Or would the kids (pre-school to bar mitzvah age) anyway enjoy the ferry so even if it's a similar price still fun to take the ferry?

yes and could save you time

for 5 people might be hard to take a taxi they rarely let more than 3 in the back

possibly not the correct name but there is an upstairs (packed with people open air cost about $.50) and then upstairs (closed in AC and not too many people. IIRC $.75.)

What's the best place to stay for shabbos?  Which hotel and which shul?  I'm Ashkenaz. Also, any suggestions for a tour guide?

read wiki and thread

Someone should take the laser show off the Kowloon wiki.  That's the worst waste of time ever.

The HKIA Airport Express train/hotel shuttle needs expanded upon...no way for me to do it on my phone.

The best tailors are in Kowloon - TST- not Admirality. Bobby's Tailors is outstanding even if their prices have creeped over the years.

For people who go through HK frequently,  they should look in to the HKIA Enrolled Frequent Traveler.   This allows you to use the E-channels at the airport,  and land crossings/ferry terminals with the Mainland.
Hong Kong also has some great hiking for people who want to escape the city for a bit.  Biggest hassle is the enrollment center is between Immigration and Customs,  and not open when the early morning CX flights arrive from US points.

I will be visiting mainland China first, and then flying from Shanghai to Hong Kong. Will I have to go through customs as an international arrival, or is it like a domestic flight?

Every Hong Kong inbound and outbound flight is international.  (With the exception of the heliport).

And if you're flying back through Shanghai,  hopefully you have a multi-entry PRC visa.
