Airline Checkin Counters: Kowloon Station (below the W Hotel) to check your bags in. You then take the MRT straight to the airport (with just a couple of stops). It's super convenient and quick. You don't have to stay at the W to check in at Kowloon station though (and FWIW you can check in at Hong Kong station on HKI, too).

You can do the not glass bottomed ones. Lantau island is a lot closer to the airport too if you did that.
Or you can do one-way glass and one-way regular.
My wife has a fear of heights, but was OK with this as long as she didn't look down.

I was sitting on the floor though and loving it :D

The primary objective here is getting breakfast. Anything else is secondary to that. So “closer to KZ” is a much bigger selling point for me than “closer to the airport”... I think.

Factoring in a 5:30 AM arrival to HKG (and add some time for depositing hand luggage at the left luggage place, and buying a local SIM if possible) and a 12:40 PM departure, is any of this even realistic in conjunction with breakfast? Or should I just forget about the Peak altogether?

It has nothing to do with where I live, and everything to do with the length of the flight before and the flight after. Would be nice to have a normal meal in a normal place in middle of the trip, instead of constantly suffering through the double-wrapped, inadequately heated compressed cardboard compost that passes for airline “food” these days, for a change.

I’m not worried if I end up missing cool touring opportunities now - IY”H I’ll be back in the future, I hope. This is just a bonus, to possibly see one or two things in addition to eating.

You can request kosher meals to be served in the lounge, and they even let you choose which meal. The meals are Hermolis and are very solid. Request in advance on Twitter.

I can't comment on which one is nicer but the Sheraton wasn't that great for Shabbos, workable for sure but I'd stay at the Shangri-la if you can.

I liked it for shabbos. Sure the Shangri-La is closer, but the Sheraton was nice and not too far of a walk. Plus they allowed me use use the stairs to get to my room which was super easy.
