Airline Checkin Counters: Kowloon Station (below the W Hotel) to check your bags in. You then take the MRT straight to the airport (with just a couple of stops). It's super convenient and quick. You don't have to stay at the W to check in at Kowloon station though (and FWIW you can check in at Hong Kong station on HKI, too).

I can't comment on which one is nicer but the Sheraton wasn't that great for Shabbos, workable for sure but I'd stay at the Shangri-la if you can.
What was wrong with the Sheraton for Shabbos? I had no issues

If that's to expensive try the Royal Garden

Stayed at the Royal Garden and was very pleased.  Just half a block farther than the Shangri-la and 1/3 of the price.  I used hotels.

I just dmed them on Twitter, they asked me which meal I wanted (lamb, chicken, or omelette), and which lounge I wanted to eat in and at what time. We were served the meals exactly on time in The Pier.

I went with Sam's Tailor on Nathan Rd. It may be enough time, depending on how busy they are then. You don't need an appointment, just walk in.

I wouldn't say you know you're getting quality, you just know you're getting Sam's. IMO it's worth spending another $100-$150 and going to someone a step up.

Thoughts on this itinerary?
Arrive early Tuesday morning. Shacharis/breakfast at KZ
Peak Tram
Big bus city tour
1-2 PM back at the hotel, nap until mincha
Mincha/Maariv/Dinner at KZ
Ladies market/night market/walk on the harbour

Wednesday:
Morning hike Dragon's back (maybe paraglide down (If I can convince DW) - anyone ever done this?)
Lunch at JCC
Nap at hotel
4 PM depart for Macau - spend evening in Macau

Thursday
Check luggage in the morning at train station.
What should I do in the morning? Maybe Hong Kong Museum of History?
Lunch at KZ or JCC, depending on where we are
Glass bottom cable car in Latau - How do I get there?
Flight to MLE 5:25PM
