Chabad has an awesome restaurant (and a cool chabad house) in Athens (Rated Number 2 of all restaurants in Athens on TA).
They also ship to all islands which you can warm up in your hotel. The food is awesome as as well!
Find them on facebook or on their website

Athens:
Hotels
Hotel Grande Bretagne (Starwood)
King George Palace  (Starwood)
Both hotel's are right near each other, grand Bretagne is a little more upscale.
Both are walking distance to Chabad (Around 10 min) and to most of the action in Athens.
Other hotel's are a little further out of all the action.

Stuff to do
GOSTIJO kosher restaurant (They have a small grocery where you can get a variety of Israeli products) [See above]

What to do

Santorini:
Hotels
There are only two options which take points.
1. Vedema, this hotel is in Megalochori, it is a little off the path (Not near the water) and you don't get the views you would expect in Santorini. (Not a great option, but if you want to stay with points, it is a nice hotel)
2. Mystique, rated as one of the best Starwood hotels in the world. Availability is almost impossible, because they only have 27 rooms. Never mind the shocking 70K Starwood points a night in high season.

Stuff to do
Kamari Beach, there is a cliff there which has a nice jump into the ocean. (Please be careful!)
Red Beach
Hiking Trail Fira - Oia (You can take a Donkey which is quite freaky, or take a tram)
Sunset in Oia (A must do, to get away from the crowds go to Sun Spirit, it is near the windmill and has great views and not packed. They only serve drinks.)
Santorini Volcano, Hot Springs.
Rent a ATV go around the island (At your own risk, the drivers in Santorini are crazy!)
Highest point of the island near the town of Prygos. Awesome panoramic views of the whole island.

Rhodes
Hotels
Sheraton Rhodes, large resort very centrally located. nice pools.

Yes. We took the tram from our hotel to the beach. There was a beach club where they offered lessons. I'll try to remember the name. We went last summer so should still be there. The Aegean is beautiful

Just want to mention a data point. Until you actually use a tour guide you do not know what you are missing. That goes for every destination. Tour guides are usually amazing regardless of how much research you did on TripAdvisor

Let down in the sense that it's not a very nice city what with the graffiti and stray dogs. Aside from that was fun

Any recommendations of a tour guide company in Athens. Or is it easier just to get around yourself? Whats a must see while we are there.
And wheres a good kosher place to eat while we are there?
Only one place to eat. Doesn't hurt that its rated #7 out of 2437 in Athens. And in their they can can recommend an awesome tour guide

Thanks to you and everyone else for all your input im really looking forward to my trip. Has anyone done scuba diving or snorkling in Greece?
I did a full day scuba diving trip in Rhodes for 35 eu!! I was picked up from my hotel and driven to their boat. I went on a boat with 10-15 others & we went rite off a gorgeous beach. The boat docks there for the day while u dive, swim etc. The dive was amazing. Saw some really cool fish. U go in groups of 3 & it's a 45 min dive. Dueing the time u r not actualy diving they provide u with free snorkeling gear to use or u can just chill on the boat or beach. They then had the option for a 2nd dive for an additional 25 euro. This was only recommended if u r a fairly competent diver as u go abt 60 feet down. They show u underwater caves and I even saw an octopus! Truly an amazing trip. Oh and obviously they transport u back to hotel wen u get bak (around 5:30 pm)

Water skiing can be done anywhere. Go diving. U won't regret it. Going waterskiing in Athens is like going to israel to ski in the Chermon

I can only speak to Rhodes as that's the only one that we went to. We found a lot of stuff to do such as the old town etc.

Each island has its own perks. I spoke to many different people in Athens over Shabbos who had been to all different islands & everyone was convinced theirs was the best. I was only in Rhodes and I loved it. A car is very worthwhile but to get the most out of your island experience I would suggest a moped or ATV. I had an ATV for 5 days in Rhodes & it was amazing. I think "officially" Mykonos & santorini are the best but you'll have a great time as long as you're not constantly worrying while you're there if you should've gone to a different island

Santorini is supposed to be amazing. I don't know about needing a car there but I would assume it's a big plus. Getting there probably requires a connecting flight from Athens or somewhere nearby. I don't think any regular airlines go directly there. Flights within Greece can be booked on Aegean for pretty cheap. Your other option is to get there by boat from Athens or maybe Thessaloniki but that can take over 20 hours
