Chabad has an awesome restaurant (and a cool chabad house) in Athens (Rated Number 2 of all restaurants in Athens on TA).
They also ship to all islands which you can warm up in your hotel. The food is awesome as as well!
Find them on facebook or on their website

Athens:
Hotels
Hotel Grande Bretagne (Starwood)
King George Palace  (Starwood)
Both hotel's are right near each other, grand Bretagne is a little more upscale.
Both are walking distance to Chabad (Around 10 min) and to most of the action in Athens.
Other hotel's are a little further out of all the action.

Stuff to do
GOSTIJO kosher restaurant (They have a small grocery where you can get a variety of Israeli products) [See above]
Acropolis (Akropolis) and the Acropolis (Akropolis) Museum
Anafiotika (old town with some shopping)
Plaka
Monastiraki
Panathenaic Stadium (Panathinaiko Stadio) first modern Olympics game.
Day trip to Delphi
Water-skiing in the Aegean Sea

What to do

Santorini:
Hotels
There are only two options which take points.
1. Vedema, this hotel is in Megalochori, it is a little off the path (Not near the water) and you don't get the views you would expect in Santorini. (Not a great option, but if you want to stay with points, it is a nice hotel)
2. Mystique, rated as one of the best Starwood hotels in the world. Availability is almost impossible, because they only have 27 rooms. Never mind the shocking 70K Starwood points a night in high season.

Stuff to do
Kamari Beach, there is a cliff there which has a nice jump into the ocean. (Please be careful!)
Red Beach
Hiking Trail Fira - Oia (You can take a Donkey which is quite freaky, or take a tram)
Sunset in Oia (A must do, to get away from the crowds go to Sun Spirit, it is near the windmill and has great views and not packed. They only serve drinks.)
Santorini Volcano, Hot Springs.
Rent a ATV go around the island (At your own risk, the drivers in Santorini are crazy!)
Highest point of the island near the town of Prygos. Awesome panoramic views of the whole island.

Rhodes
Hotels
Sheraton Rhodes, large resort very centrally located. nice pools.

Santorini is supposed to be amazing. I don't know about needing a car there but I would assume it's a big plus. Getting there probably requires a connecting flight from Athens or somewhere nearby. I don't think any regular airlines go directly there. Flights within Greece can be booked on Aegean for pretty cheap. Your other option is to get there by boat from Athens or maybe Thessaloniki but that can take over 20 hours

Is 3 days more then enough time to spend there ?
Where is the best place to stay . I see there is flights from London to santorini direct.

If you want to "get it done" then 3 days is more than enough. People go for less than a day even. Based on what I know from Rhodes however, you can be there 4 or 5 days and have plenty to do. I stayed Sunday to Friday and felt it was the perfect amount of time

I'm going to Crete, Rhodes and Corfu and looking to go to one other island, which one would you suggest?

Thanks.

I think beaches are Nicer on Mykonos  more of a resort feel ,yet plenty of night life etc but  less to see VS. Santorini that you will take many photos of the view -- can not go wrong with either

http://www.breakingtravelnews.com/news/article/greek-tourists-urged-to-take-cash-as-crisis-continues/

ATM limit of 60 euro, make sure to bring cash with you

WRONG INFO U GAVE-
- 60 euro limit only for those who do not have out of country credit card

with a foreign card you can get as much cash as "your" bank allows-- I took 1000 euros out today with my UNITED CARD

I would suggest you bring some cash , do not need more than 1 or 2 days expenses

yes-- took 450 euros =$500 at  6:30 am greek time  ( 11:30pm ny time) and 500 at 11:00 am Greek

if anyone is going later than next few days -things may change-- i was just out and i saw short lines at ATM'S - and they were still working --when u arrive at airport if did not bring cash from home and feel insecure - try airport ATM first
