I don't know where you will stay in Amsterdam.
The best opportunities are
a. in the southern part of the city center of Amsterdam (called Amsterdam Zuid),
b. a newer part of Amsterdam situated more south from Amsterdam Zuid, called Buitenveldert.
Buitenveldert is actually the city part that has the strongest frum presence. In Buitenveldert there is a Holiday Inn Express owned by a frum guy; his staff also knows what's going on and they serve a kosher breakfast.

Important!!!
Amsterdam is not dangerous for an observant Jew to walk around with a yarmulke. In the western part of the city ofAmsterdam (called Amsterdam West) is a bigger concentration of Muslims and of a result it is more likely to get some remarks....
Nevertheless you will see that safety measures near shuls are very visible and stringent. In front of virtually any shul you'll see military police and shomrim.
That's why it is important to make yourself known on forehand (by calling them) and take ID with you.
So do yourself a favor and announce your coming through the telephone numbers that are mentioned on the websites.
There is an eruv in Amsterdam, although not everybody holds by it.
