Just got back from 12 hr stopover, here's a few things I believe r important.

Worth to get unlimited pass for the metro for 15€.

EVERYTHING is closed till 9 am. Besides for the metro.

The line at Anne Frank museum started at 8:15 am. By 9, it was crazy long already.

Kosher restaurants and many other places only take local credit/debit cards. So have some cash.

The boat tours are for 1 hour. Nice way to relax around the city.

I heard from a local Jew, and on this forum that they eat Herring (harring) from the kiosks.

Very nice people at the pizza shop.

Would you say Amsterdam is worth making into a day trip, as a stopover?

We really liked it last summer.
Spent two nights, which was perfect.
We ate the herring.
The Sal-Meijjer sandwich shop is the only kosher place near the downtown/touristy area, and even that is a 30+min shlep.
Anne Frank House, Rikh, Heineken -- all worth doing.
We didn't make it to Van Gogh but would have liked to do.
Touring Red Light District is optional -- not tznius, obviously.

It's a great city; we had lots of fun there. I'd prefer more time than just a day trip, but if that's all you can get...

Sorry I didn't see this. Yes Shabbos in AMS is DEFINITELY doable. There's a HIE in the Jewish community and it has Kosher breakfast included.

I had 2 weekdays on my trip and would have loved more, although we did hit up most of the main attractions.

The area is called Buitenvwldert. Davids Corner sells ready made Shabbes food; not a ton though. You can also get Deli there. There is a bakery a block away called Laromme and they also have ready made Shabbes food.
