I am staying for one night in early October at the Novotel Amsterdam City. Are there any kosher options within walking distance?

Also, anything kosher at Schiphol?

TIA
That's walking distance to the main kosher area. Lookup H Baron or Sal Meyer as a reference but everything is within a half mile or so in that neighborhood.

They only have minyan sat and sun.

And without a minyan.
I'll be there like 9.30 AM

If not any other options? (I hate to daven in the airport)

It's a museum during the week so you'd need to buy a ticket and there will be tourists around. I highly recommend the tour in general- its self guided with audio guides.

You can check hours online.

don't rent a car if you are planning to be in the city.

Amsterdam is a walking, bike, and transit city. Uber is generally not a good way to get around. In a day and a half, for sure try to get tickets to Anne frank, go to Portuguese Shul, and do a canal tour. Heineken experience is also goo if that's your thing. If not, either van gogh musueam or Rijksmuseum.

Get the I Amsterdam card.

Plenty to eat in the south part if the city - you could stay there as well if you want to be near shul.

can all this be done in a day?

Anna Frank is sold out for both Sunday and Monday.

Will probably stay at the holiday inn Express South $115 for the night

The card has unlimited transit and key activities, look into what I has as see if it works.

I think Portuguese is separate.

I looked at it, plenty of options just don't know which are good ones.

You only mentioned Anna Frank, shul , heinken
Which is why I was curious what besides for unlimited transportation is attractive about the card.

I think it also has canal and Rijksmuseum. It may also include train to and from schipol. I was just saying it as an option. Obviously if you do things that aren't included, don't get it

The trick to getting the anne frank tickets when sold out is to take the tour.  It is half hour, informative and then gives you automatic entrance.  Only 5 eoros move than regular admissions.  It is listed at the bottom of the website.

I'm stopping over in AMS on the way to TLV. We're landing at about 6am and taking off again at about 9pm. It'll be myself, wife, and 7m old daughter. Trying to figure out a tentative plan. We'll take the train into the city...that's all i got so far.

Are cabs expensive? Are Trams easy enough with a doona?

Can I get to a shul in time for shachris? Good breakfast place near said shul?

thanks
do you have a TR? I'll have a full day tomorrow as well and would love to hear what you did.
