Is it possible to disembark at a port that isn't the final port? Say start in in NY and disembark at Port Canaveral, the first stop?
If so what are the repercussions, if any?

Wouldn't work according to this - http://reason.com/blog/2011/08/08/why-you-cant-take-a-cruise-fro - Cruise ships are foreign vessels so you must go to another country.

Theoretically, what would stop someone from taking off their bags (if its not too noticeable, that you are leaving). If someone comes back late from an excursion they leave without you, so what would be the difference...

Please do. In your case you would probably need to go to another country first (eg Bahamas) and then you can def get off in Florida without continuing to Baltimore.

I spoke with a CBP supervisor down in Port Canaveral. He said unless the ship is registered in the US, then you would be in violation of the Jones Act if you weren't going to go to a different country first. The violation is a $300 fine charged to the cruise carrier and therefore would not effect your Trusted Travelers status. They cruise carrier may or may not charge you for the fine.
Theoretically, what would stop someone from taking off their bags (if its not too noticeable, that you are leaving).
Therefore I will ship my bags to my final destination with FedEx/UPS. I am not interested in  any sort of hassle.

They don't go to Florida from Northeast. They go from BAL to Charleston, SC= 7 days then from Charleston to JAX= 7 days. Too long.

Right, cuz they stop in every tiny hicktown and village along the way. Seems like only one from NYC is a 7 day trip through the hudson river.

Have done Cunard in Europe and had a great time. Big difference is that the ship is very European and very different activities.

Cunard calls them self "ocean liner" and not a "cruise ship" and targeted more to the older people, more formal

Right, so this is not in the same league as Costa which is a cruise ship. Was wondering if anyone had experience with this one specific.

Yes it is. Weren't many younger people on the ship and the formal dress in dining room and common areas at night were pretty strictly enforced.

Right, so this is not in the same league as Costa which is a cruise ship. Was wondering if anyone had experience with this one specific.

The Costa is similar to Norwegian, in my opinion. However, we took it in the Caribbean, not in Europe.

In my experience, the American ships have no smoking in most places, but the Costa (perhaps more so in Europe),
has a lot of smoking in the main areas, lobbies and balconies. They also have all announcements and "fire drlls" in seven languages and
there is tons of jabbering in all tongues, in loudness and attitudes, and lots of people of all ages.

That obviously happens in every city, but when you are sharing a ship for a week, everyone is up close with you in the hallways, elevators, mealtimes, "boats to shore", etc.. It's a lot of fun -- and you can tune out whatever you want.

In my experience, Celebrity and newer ships are very classy, elegant, and people are respectful while still having a great time together. 
P.S. If you are taking Costa via Kosherica to the Greek Isles/Mediterranean, it will be amazing!
