Best temp. to leave oven on over Yom Tov

Whats the best temperature to leave the oven on over Yom Tov to heat up food?
It needs to be hot enough to make food hot without drying it out and don't wanna make the house too hot...
175? 200?

175-200 won't get food piping hot.  Are tou sure your oven can't be adjusted on Yon Tov? I would suggest a minimum of 250 otherwise, and raising the food to room temperature before placing it into the oven.

+1 but 250 will still take a long time to get food hot. If your just using oven to heat food why don't you use a blech?

we do 225 and everything gets really hot.

if its a gas oven leave some ventilation, all ovens emit CO, on rosh hashana I was in a "sealed" basement and the alarm went off...

Sounds right to me.  Have to find the happy medium to keep food hot without drying it out and heating the house up.

225 is perfect to avoid drying out make sure it's covered really well

One Word: AIR CONDITIONING! Every erev shavuos someone, somewhere makes the mistake of thinking it wont be hot...It ALWAYS is! 8)

I use a hot plate (platta) for Shabbos and Yom Tov. On a typical Friday night wheat the food ups. The oven and then place it on the hot plate. We actually use an inverted cookie sheet so it shouldn't burn (they get incredibly hot). Shabbos morning we put some Kugel, deli roll, schnitzel etc. on a few hours before we are ready and it's always piping hot.

This year we are going to trait with Dairy. Double wrapped the hot plate, and also the food. Hopefully it will warm up well. We also left a small burner on with a blech which we can use to heat soup, vodka sauce, and make pasta.

We never leave the oven on especially in the summer. It makes the whole house unbearably hot.

I'm not a Rabbi, and I never learnt hilchos shabbos in depth, but are you sure it isn't a problem to put food on a hotplate on shabbos?

As long as it is dry (no sauce) and already fully cooked its ok. Same as putting it on top of the cholent.

You can't put it directly on a hot plate/blech.  The reason you can put something dry that's fully cooked on top of a cholent pot is b/c that's not derech bishul.
If you have a pot or pan with empty space on top of a hot plate then you should be good to go if it's dry+fully cooked.

As for whether shnitzel is dry or wet...ask your LOR.

I don't think that's correct, but ask your LOR.
From my understanding you can't do any kind of chazarah directly onto a hot plate even if the food is dry and fully cooked.

also, some poskim who are not mekhil on hot plates may be mekhil with an inverted pan or some ate mekhil if you have hot plate on a timer and put on the food while it is still off
