Just want to confirm that the 72 hour starts from the night of my arrival. Can anyone?

Yes, it should start at midnight after your arrival, giving you slightly more than 72 hours,  but don't cut it too close.

I booked TLV-ZRH-PEK-DEL and plan on staying for 72 hours in Beijing and flying on different flight.  Should I have any issues?

I'm not sure that they'll look for the reason u have the exemption upon departure. My guess is worse case a fine....

At this point, Visas for Americans in countries like China, India, Brazil and Russia seem like ways to pay back America for the way that we inconvinience their people

Your second point is definitely the case AFAIK, but still not sure what you're suggesting with the first.

I've never used the 72-hour visa, but I assume you get some sort of stamp or documentation that allows you in the country which is reviewed by immigration upon exiting China. Changing your ticket to PVG just delays the inevitable, immigration comparing entry and exit times.
