Where do you take this info from? Are you referring to passenger flights?
Actually, flights heading to or from Beirut, cannot even fly over Israeli airspace. Even flights from Jordan take a massive detour down south over Egypt and the Mediterranean to get to Beirut.

Oh I get it. You're referring to military planes. I actually don't think they fly to Beirut. Rather other cities where there's terror activity. Besides, they fly over Lebanon. They don't fly "to" Lebanon.

It's confirmed that whoever received the 2 shots in Israel and waited 7 days before traveling, will not be subject to quarantine on the way back.
I'll still waiting for an update with regards to kids' status / schools

AMERICAN AIRLINES TO LAUNCH TEL AVIV TO NEW YORK SERVICE MAY 2021

First flight will operate eastbound from New York on May 6, tickets will be on sale Jan. 25
Route will offer enhanced connectivity from the North East as part of American and JetBlue’s strategic alliance

FORT WORTH, Texas — Beginning May 6, American Airlines will launch new daily year-round service from; Tel Aviv; Israel (TLV) to New York (JFK); on a Boeing 777-200. Flights will be available for purchase beginning Jan. 25.

Onboard customers can choose to travel in Flagship Business, Premium Economy or Main Cabin. WIFI and inflight entertainment are available throughout the aircraft. The partnership offers customers enhanced connectivity and access to the biggest network in the Northeast. This alliance will be integral for both carriers as they rebuild operations in the wake of the COVID-19 pandemic.

“It is a great privilege for American Airlines to return to Tel Aviv,” said Tom Lattig, Vice President EMEA Sales and Distribution, American Airlines. “The safety and comfort of our customers and team is always our top priority, and we look forward to serving our customers on this important business, leisure and cultural route.”

American also intends to launch new service from TLV to its largest hub, Dallas-Fort Worth (DFW) later this year, which will provide several connections throughout the U.S. There will be additional details on DFW service at a later date.

If you get a shot and go right to TLV to depart, can you return a week later without quarantine?

No you need to wait one week before leaving Israel. I posted a link today in the covid group. But then it's Israel so things can / will change
