Flight options.

There is 2 Airports serving Iguassu (Iguazu, Iguaçu) Falls, IGU on the Brazilian side and IGR on the Argentinian side.

When searching for award availability search first to connecting  airports as for example, from NYC VIA Brazil search

LAN thru Lima Peru (cheapest option usually) Oneworld (BA Shows Lan)
JFK-GIG  on Tam (BA.com) and/or AA (AA.com)
JFK- GRU AA, Delta
EWR-GRU UA
COPA airlines flies thru Panama City and GRU (usually 2 stops)

Argentina options

Aerolineas Argentina JFK-EZE
LAN Argentina


Hotels
Belmont in the Brazilian side of the park
Sheraton Iguazu in the Argentina side of the park. (SPG)
Park Hyatt Iguacu Falls coming soon!

Major Activities

The Argentinian side is more up-close and personal.
You will need to walk both the upper and lower trail on the Argentina side. The upper will take about an hour, the lower about 2. Make sure to do the boat ride on the lower trail for the most awesome views. You will get soaked so take along a ziplock for your camera. You can also take the train to Devils point

The Brazillian side is more of a panorama view.
On the Brazil side at the falls there is less walking as you are not next to the falls like on the Argentina side but rather across the river from them. You will take a tram to the start of the trail on the Brazil side and just walk along side the falls, starting from the pink hotel till the end. When you get to the end is when you will be totally blown away. Walk out on the boardwalk and you will get the most amazing view of the falls.

Bird park well worth about an hour

Helicopter tour on the Brazillian side (Argentina band it as its not Eco friendly)

There is a  huge dam you can tour that powers all of Paraguay and huge portions of Brazil and Argentina

Airport Transfer Options

Cabs are available at fairly cheap from both airports to the park and hotels (cross border too)

how would break it down

I haven't been to igauzu, but being a bit familiar with Argentina's situation of recent, Argentina's peso is extremely weak, and the dollar gets you very far there, I'd imagine it gets you a lot further in Argentina, as long as you are paying in pesos.
Iinm, it stopped being a thing for a bit, but it came back

I am sure there will be further questions.
1-both have decent budget accommodations
2-we did taxi and the taxi driver took care of everything - not necessarily budget but it wasn't expensive
3- Brazilian side needs  2-3 hours for the falls and if you want to do other stuff like the boat ride add a couple more hours
Argentina side - depends on how many trails (you don't necessarily need to do upper and lower trail) you want to go on 4-6 hours probably 
It can be done in one long day
i would tell you that although its far from the budget option, staying in the park allows you unparalleled access to the park, before and after the park closes to other guests and is well worth the money

If you have extra time in Curitiba, look into the Serra Verde Express. They also had some nice flea markets there in Curitiba.

I am sure there will be further questions.
The border shouldn't take a long time if you have all you're documents (not sure exactly what you need now with covid and all). I personally didn't spend more than a few hours (maybe 6) on the Brazilian side of the falls. Most of the time, 1.5 days, were spent in Argentina. In terms of dollar blue, I don't think they do that anymore, but you still get a great exchange rate normally.

It seems like there are good Hostel options on both sides.
Considering I will be arriving into IGU at around 11:30 PM, I am leaning towards staying in IGU on Saturday Night & IGR on Sunday night.
I would spend Sunday going to the Brazilian park and Monday in the Argentinian Park.

1. Is there something else to see in IGU other than the falls? If, not how should I fill the rest of my time there?
2.  Other than the falls, does IGR have something else to offer?

There are other things to see there, though not many people see them. For example, there's a big dam on the Paraguay border that's cool, plus there are tons of nature things like hikes. You can even go to Paraguay if counting countries is something you like to do.

In terms of hikes, are you speaking of BR or AR?
Lots of stuff around the falls, rappelling, rafting, helicopter, etc.

Check out my TR in the wiki. Border took forever from Brazil into Argentina because customs agents went on lunch break for an hr so no one could pass, and then there was the backlog to process.

Oy, that's tough. I had the exact opposite experience from Argentina to Brazil, see my TR.
