My wife has a Starwood account with her maiden name and old address. Is there any way that I am able to use her points to book a hotel stay for myself only? She won't be there to bring me as a guest.

yes she can make a reservation and add you onto it. you will be able to check in by yourself. not a problem

At what point can she add my name? I'm at the complete your reservation part and I don't see any option to add a second person...

just call up the hotel after the reservation is made and tell them she wants to add her husband to the reservation since you will be checking in before her

If you book on phone, they can add the name during the booking.

You can call central to add the name if you originally selected two guests - a benefit to this is you will get a new confirmation that will show the name on the reservation.

Or you can do directly through hotel front desk - this was my preferred way this year, however central seems to have become more proficient so now not so bad.
I remember when a coke was a nickel, and you could buy VRs in OD.
