If I have a five nights under one  reservation, booked under the lower rate, can I drop two nights off without getting repriced to the higher category rate ?

It will automatically get repriced due to you not staying 5 nights.
You have to call 888-625-4988 & find out. Its definitely being repriced to a higher rate

If I book 2 rooms to I get credit for each room as a night IE. If I book 2 rooms for 2 nights do I get credit for 4 nights or still 2? (both for status and promos such as stay 15 nights and receive bonus of x)?
