Any idea if its a problem flying with an expiring/expired green card if you have the 1 year extension paper?
No problem as long as you have your green card AND the letter with you.

If you're filling out of the country I don't think it's a issue to come in and out but don't have first hand info. If you file from within the u.s. you would have to file for traveling papers

Finally got the letter that they approved my application to remove the condition on my Green Card (filed it back in May). It said in the letter that I shouldn't leave the country until I receive my new card in the mail, which can take up to 60 days. Practically speaking, how long will it actually take to receive the card? Want to leave the country for Pesach...

You didn't get a letter for a one year extension?

You're thinking about when you apply for removal of condition when your 2 year Green Card is expiring. I got that letter, but now, my application got approved, and it said I should receive my new card within 60 days and I can't travel until I receive it (presumably because that letter is no longer valid since it says "this letter is valid for 1 year or until you receive a decision on your application").

I would assume that the wording on the letter is just letting you know that this is not an official document that you can travel with ie You gotta wait for the green card. don't think ur ext. Letter becomes invalid. And the letter that says "only valid till you receive a decision" to me is just saying if you get denied then the letter is no longer valid or once you receive your card gotta use the card not the extension paper...

Playing games with USCIS and fighting with them about the meaning of their letter doesn't sound like a smart idea to me. Hopefully them saying that I'll receive the card within 60 days is just a safety net and it actually shows up much sooner.

My license is about to expire and it was done with a student visa. I'm not applying for a green card yet. What's my best bet?

Go to Pennsylvania, at least that's where all the Hispanics have their licenses from.
