Just to clarify, what is the OP asking about?  There are two defenitions of 'Sabbath Mode' that I have seen used.  1) To override the 24 (or 72) automatic shutoff; 2) To override the digital controls in order to adjust the temperature of the oven on Shabbos

Usually, it includes both...
I can only speak from ancedotal evidence.  The last three ovens I have owned only have the 24/72 hour override.  Finding a model that can turn off the digital display is much harder to find.
